A Summary of the Food Standards Agency Rules:

  • Game must be chilled in a larder to no more than 7°C for deer and 4°C for small game.
  • All game supplied must be examined by a trained person.
  • Deer and game must be tagged, so that its origin can be traced.
  • Deer must be skinned before being frozen.
  • The cold chain must be maintained during transport.
