A Summary of the Food Standards Agency
Rules:
- Game must be chilled in a larder to no more than
7°C for deer and 4°C for small game.
- All game supplied must be examined by a trained
person.
- Deer and game must be tagged, so that its origin
can be traced.
- Deer must be skinned before being frozen.
- The cold chain must be maintained during transport.
